Quick Easy and Delicious Egg Salad Recipe

Now that I am not working and a normal day consists of being at home I have renewed my joy of cooking. After years of fast food lunches and lots of dinners too it's been nice to have the time to tinker in the kitchen. Although nothing beats homemade fried chicken sometimes you have to keep it light. I got a craving for some egg salad the other day and I thought I would share my recipe. There's nothing to it and it is delicious.
________________________________ Ingredients: 8 hard boiled eggs 2 green onions 3 or 4 small sweet gherkin pickles 6 tablespoons mayo 4 teaspoons yellow mustard 1/4 to 1/2 teaspoon of salt (scale to taste) 1/4 teaspoon of coarse black pepper
Boil eggs and allow them to cool in the fridge. In mixing bowl mix mayo, mustard, salt and pepper, set aside. Peel and dice eggs then add chopped green onions and chopped pickles. Spoon mayo mixture over the eggs and onions then stir. If everything is cold you can eat it right away. I like mine on toast with green …
